2. After slicing the zucchini, place in mixing bowl and add olive oil, Italian Seasoning and garlic. Mix to ensure the zucchini is well coated.

3. Arrange the tomato and zucchini slices by stacking them long-ways in the baker. They should be alternated: tomato, zucchini, tomato, etc.
4. Cover with foil and bake for 25 minutes.
5. Mix your topping by combining melted butter, olive oil, panko bread crumbs, Parmesan cheese, and mozzarella cheese.
6. Remove veggies from the oven and top with the bread crumb mix. Place back in the oven, uncovered, for 20 more minutes.
7. Remove from oven, allow to cool, plate and serve.
