Ingredients: • 3 tablespoons olive oil • 4 boneless skinless chicken thighs • 2 - 14 ounce cans of navy beans (with liquid) • 4 slices thick-cut bacon (chopped) • 3 fresh sweet peppers (sliced) • 1 medium carrot (finely chopped) • 1 small yellow onion (chopped) • 4 cloves garlic (large sliced) • 2 links garlic sausage (cut into 4 large pieces) • ½ cup plain breadcrumbs • 1 cup chicken broth • 4 thyme sprigs • 2 bay leaves • Salt and pepper to taste

1. Preheat oven to 400º F. Heat 2 tablespoons of oil in the sauteuse.
Add in the chicken. Sprinkle with salt and pepper. Cook without flipping on medium heat for 10 minutes.
2. Move the chicken to one side of the pan. Add in the bacon. Cook for 5 minutes. Add in the peppers, carrots, onions and half of the chopped garlic. Cook for another 6 minutes. Stir in 2 tablespoons of breadcrumbs.

3. Mash ½ cup of beans with a fork in a separate bowl to make a paste
and set aside.
4. Stir in remaining beans (with their liquid), chicken broth, thyme, and bay leaves into the sauteuse. Stir in the mashed beans as well in this step.
5. Nestle the sausages around the chicken. Bring to a simmer over low-medium heat. Cover and place in oven for 30 minutes.
6.In a separate bowl, mix together remaining bread crumbs, 1 tablespoon olive oil, and the other half of the chopped garlic.
7. Remove cassoulet from the oven and top with the breadcrumb mixture made in previous step. Place back in oven on the broiler setting for 5 minutes.

8. Remove from oven and allow to cool before serving
