1. Make sure turkey is thawed all the way through before cooking. (24 hours in the fridge for every 5 pounds.) Preheat oven to 350º F.
2. Use a zester to zest about 1 teaspoon of lemon rind. Add this, 2 sticks of butter, oregano, thyme, salt, and pepper to a small mixing bowl. Mix until well
incorporated.
3. Remove everything from the turkey’s cavity and pat the inside and outside dry with paper towels.
4. Loosen the skin of the turkey by gently sliding your hand between the skin and meat.
5. Rub the butter mixture under the skin and all over the outer skin of the turkey.
6. Stuff the oranges, lemon, and garlic cloves inside the turkey. Tie the legs together with twine. Place the turkey onto the rack in the roaster. Pour the chicken broth into the bottom of the roaster.
7. Cook in the oven uncovered for 13 minutes per pound of turkey weight. Baste with the juices every 45 minutes using turkey baster.
8. Remove from oven and allow to cool before cutting and serving.
