Ingredients • 3 large (10 inch) flour tortillas • 1 pound ground turkey • 2 large jalapeno peppers (seeded and diced) • 5 cloves garlic (minced) • 1 white onion (finely chopped) • ½ tablespoon paprika • 1 teaspoon black pepper • 1 teaspoon salt • 1 teaspoon cumin • 1 teaspoon coriander • 1 tablespoon vegetable oil • 1 cup pepper jack cheese (shredded) • ½ cup Colby jack cheese (shredded) • 1 large tomato (chopped) • 1 cup cilantro (finely chopped) • 1 avocado (sliced) • 1 cup sour cream

INDUCTION 21 CERAMIC COATED NON-STICK FRY PAN (12.5 IN.)
1. Add vegetable oil to the fry pan and heat over medium. Add in onions and jalapenos. Cook for 3 minutes until they have softened. Meanwhile, combine to two cheeses. Set aside.
2. Turn the heat down to low-medium and add the ground turkey and dried seasonings along with ½ cup warm water. Stir until well incorporated. Cook for 7 minutes (until turkey has browned.)
3. Set cooked filling aside and wipe out the pan. (No need to wash.) Add a dab of vegetable oil. Lay one tortilla in the pan and fry for about 1 minute on each side.
4. Add a couple of tablespoons of shredded cheese to one side of the tortilla. Next, add the meat and top with a bit of chopped tomatoes and cilantro.
5. Sprinkle some on more shredded cheese before folding closed. You can add the avocado in the step if you prefer (as opposed to serving it on the side.)
6. Cook for 2 minutes and then flip. Cook for another 2 minutes and remove from pan. Repeat this process until you have 3 quesadillas.
7. Cut each quesadilla into thirds.
8. Serve with additional cilantro, avocado, limes and sour cream
