Ingredients • 16 ounces uncooked tortellini (any kind of filling will work) • 1 tablespoon olive oil • 6 Roma tomatoes (diced) • 1 medium onion (diced) • 3 cups fresh spinach • ½ cup vegetable stock • 4 cloves fresh garlic (minced) • ¼ teaspoon salt • ¼ teaspoon black pepper • 1 teaspoon oregano • Crushed red pepper flakes to taste • ¼ cup shredded Parmesan cheese

1. Heat olive oil in Sauteuse over medium. Add in onions and cook for 2 minutes.
2. Add in tomatoes, oregano, salt, pepper, garlic, and chili pepper flakes. Cook for 3-5 minutes before adding vegetable broth. Cover and simmer on low for another 2 minutes.
3.Meanwhile, place pasta insert into stockpot and fill 3/4 way full with water. Place on lid and bring to a boil on high heat.
4. Add tortellini to boiling water and reduce heat to medium. Cook for 8-10 minutes. Drain by simply lifting insert out of pot. (See video below!)
5. Add spinach to the tomato sauce and remove from heat. Stir to allow spinach to wilt a bit. Add in the tortellini.

6. Add in Parmesan cheese and toss.
