Ingredients - Marinara • 2 tablespoons olive oil • 1 cup red onion (finely chopped) • 4 cloves garlic (minced) • ¼ teaspoon red pepper flakes • 2 cans whole tomatoes • 1 teaspoon dried oregano • 1 teaspoon salt • 1 teaspoon sugar
Ingredients - Meatballs: • 2 pounds ground chicken • 1½ cups panko breadcrumbs • 1 cup shredded Parmesan cheese • ¼ cup fresh parsley (chopped) • 2 large eggs • 1 teaspoon salt • 1 teaspoon dried oregano • ¼ teaspoon black pepper • 2 cups shredded Mozzarella cheese • 1 tablespoon olive oil Optional: • Pasta • Garlic bread

1. If making homemade marinara, heat olive oil in large skillet over medium heat. Add chopped onion and garlic. Simmer for 2 minutes. Then add remaining ingredients and reduce heat to low-medium. Cook for 30 minutes.
(You can also use store-bought marinara.)

2. Prepare meatballs by mixing together all of the "meatball" ingredients except for the Mozzarella cheese in a large bowl. Set aside ½ cup panko breadcrumbs for the topping. Form 12 meatballs, about 2-3 inches in diameter.
3. Place these into the marina sauce in a single layer. Cook for 10 minutes.

4. Flip and cook for another 10 minutes. Turn the oven on broil. Mix together reserved breadcrumbs and 1 tablespoon olive oil Spread mixture on a baking sheet and broil in oven for 1 minute.
5. Remove meatballs from heat and top with shredded Mozzarella cheese and the breadcrumb mixture.

6. Broil in oven for 5 minutes, or until cheese is melted and bubbly.

6. Serve with pasta and/or garlic bread.
