Lemon Blueberry Quick Bread

 Yields: 6 servings
Prep time: 10 min
Cook time: 15 min

Ingredients for Bread:
• spray butter
• 2 cups all-purpose flour
• 1 cup sugar
• 2 teaspoons baking powder
• ½ teaspoon salt
• 2 eggs
• ½ cup milk
• ½ cup butter (melted)
• ½ cup sour cream
• 2 teaspoons lemon zest
• 1 teaspoon vanilla extract
• 2 cups fresh blueberries (reserve ½ cup for topping)
• 1 cup strawberries
• whipped cream if desired

Ingredients for Glaze:
• 2 cups confectioner's sugar
• 2 tablespoons butter (room temperature)
• 4 tablespoons milk
• 1 teaspoon vanilla extract

     TOOLS NEEDED:  

     CERAMIC CLASSIC LOAF PAN (1 QT.) STAINLESS STEEL NARROW SPATULA

     1. Preheat oven to 350º F. Grease loaf pan with spray butter and set aside.

    2. In a large bowl, mix together flour, baking powder, sugar, and salt.

    3. In a separate bowl, mix together eggs, milk, sour cream, lemon zest, and vanilla.

     4. Add this mixture to the bowl with the dry ingredients. Stir together until just combined. *Be sure not to over mix.

     5. Gently fold in blueberries.

    6. Pour this into the loaf pan. Bake for 65 minutes.

    7. While the bread is baking, prepare glaze by mixing together the "Glaze Ingredients." Remove bread from oven and allow to cool for a few minutes.

    8. Spread glaze on top while still in loaf pan. (Reserve 2 tablespoons. for drizzling.) Allow to sit for 10-15 minutes.

     9. Turn pan over to gently remove bread. Place on plate and drizzle more glaze on top. Arrange strawberries and blueberries on top in the shape of the American flag if desired!
