TRI-PLY NON-STICK GRIDDLE | INDUCTION 21 STAINLESS STEEL CERAMIC COATED FRY PAN (8 IN.) | STAINLESS STEEL FLAT WHISK |
1. Preheat oven to 350º F. Add pancetta to the fry pan and fry over low-medium heat (5-7 minutes.)
2. Separate the yolks from the whites and place in 2 bowls.
3. Either use whisk or hand mixer to beat egg whites until stiff peaks form. Add the salt and whisk a bit more.
4. Spray the griddle well, even if you use wax paper. Spoon egg white into 6 dollops onto the griddle. Use the spoon to form an indentation in the center, like a nest shape.
5. Bake in oven 5 minutes.
6. Remove from oven and add the egg yolks to the centers.
7. Sprinkle on shredded cheese and return to oven for another 15 - 20 minutes (until yolk is set and cheese is melted.)
8. Sprinkle on pancetta, green onions, and black pepper.
9. Peel egg clouds off of wax paper and serve
